El Pollo Loco Opens First Lubbock Restaurant
El Pollo Loco, the nation’s leading restaurant for citrus-marinated, fire-grilled chicken, today announced the opening of its first restaurant in Lubbock, Texas, located at 7102 Quaker Ave. The restaurant, opening July 6, introduces Lubbock guests to El Pollo Loco’s signature fire-grilled chicken and Mexican-inspired menu made with quality ingredients.
Owned and operated by longtime area businesspeople, Katie Hughes Mallory and Lowry Hughes, the restaurant marks their first El Pollo Loco location. The Hughes family has served the Lubbock community for nearly two decades through five local Wienerschnitzel restaurants and now brings El Pollo Loco’s signature fire-grilled chicken to West Texas as part of its continued investment in the market.
Guests can enjoy El Pollo Loco’s signature citrus-marinated, fire-grilled chicken, prepared over an open flame, alongside burritos, bowls, tacos and handcrafted sides made with quality ingredients.
“We’re excited to introduce El Pollo Loco to Lubbock and bring guests a new restaurant centered around quality ingredients and fire-grilled chicken,” said Katie Hughes Mallory. “Having grown up with El Pollo Loco in Southern California and spent nearly two decades serving the Lubbock community through our family’s restaurants, it’s incredibly rewarding to bring a brand we know and believe into West Texas. We believe guests will appreciate the quality and distinctive menu that have made El Pollo Loco a favorite for generations.”
The approximately 2,330-square-foot restaurant features the brand’s Iconic design with seating for 56, with 44 seats in the dining room and 12 on the patio, along with a convenient drive-thru for guests on the go. Hours of operation are 10:00 a.m. to 10:00 p.m., seven days a week, with dine-in, drive-thru and takeout available. Third-party delivery and catering services will be introduced in the coming weeks.
